Watermelon Salad with Feta Cheese and Pickled Blueberries #

Salad 1/4 watermelon | Blueberries 1 pint blueberries |
Directions #
- Get pickling liquid ready for Blueberries: combine apple cider vinegar, sugar, allspice, chili, coriander, and salt into a pot and bring to a boil. Shut it off and throw blueberries in. If blueberries float, put plate on top to weigh them down.
- Remove outside of watermelon. Cube the watermelon. Cut the feta into cubes. Combine the watermelon, feta, olive oil, chopped mint, red onion, salt, pepper, and red wine vinegar. Mix blueberries into it.
- Garnish with a bit of arugula on top.
