- Nicole has been playing handball since the age of five
- At the age of seven, she moved to Paris where she attended the American School of Paris and played at the Parisian club, Rueil-Malmaison
- Andersen has been selected to numerous elite training programs run by the Danish Handball Association, and in 2011 she played a few matches for the Danish U16 National Team
- After a decorated youth and junior career in Europe, Andersen decided to join the USA Team Handball Women's National Team player pool in 2014
- In 2016 Andersen wanted to challenge herself and get out of her comfort zone in Denmark
- She decided to move to France, where she played professional handball with OGC Nice Handball
- Also played for HIK Hellerup in Copenhagen, Denmark
- She finished her bachelor's degree at Copenhagen Business School in the summer of 2020 and moved to France to play handball at AS Cannes Mandelieu.
